Ingredients
4 Zucchini
500g Minced beef
Frozen Diced Vegetables
420g Heinz Big Red Tomato Soup
Grated cheese

 

Method
1. Preheat oven to 180 degrees and oil or cover a tray in aluminium foil
2. Cut the zucchini length ways and scoop out the middle of the zucchini (keep it, you can add it to your mince) and fit them onto the covered tray and set aside.
3. Fry mince and combine tomato soup, scooped out zucchini guts and as many diced vegetables as you want.
4. Scoop the mince into the cut Zucchini’s then cover with cheese*.
5. Cover tray with aluminium foil and cook for 30-40 minutes**.

Serve with more vegetables, mash pumpkin/potato or chips.
 

*You can add cheese before or after cooking.

**You will know they are ready when your zucchini is soft enough for your liking so check them periodically so you can get it the way you want it. I like mine with still a bit of crunch.
